Sunday Dinner Venison Roast

From mid-November til May, hunters can bag a buck a day in Alabama. That makes deer hunting one of our most popular sports. Venison is a versatile meat that lends it's to all kinds of recipes.
Recipe Type: Main Course
 
Ingredients:
  • 1 hindquarter
  • Garlic cloves, to taste
  • Celery seed, to taste
  • Black pepper, to taste
  • 2 medium onions, sliced
  • 2 cups Dale's Steak Seasoning
  • 1/2 cup instant coffee
  • 1/2 pound bacon
  • Salt and pepper, to taste
  • Small onions
  • Carrots
  • Small potatoes
  • 1/2 cup vegetable oil
  • 1/2 cup white vinegar
Directions:

Remove all sinew and fat. Make splits in top of raost large enough for split garlic cloves to be slid into. Place roast in roaster. Pour 1 cup vegetable oil over top of roast followed by 1/2 cup vinegar. Salt and pepper to taste, and sprinkle with celery seed. Place onion slices over top of roast and drape bacon slices over the top of onions. Add water to pan to a depth of 1 inch. Add 2 cups Dale's Steak Seasoning and 1/2 cup instant coffee. Cover roaster and cook at 300 degrees for 4 1/2 hours. Baste each hour with drippings. At approximately 45 minutes before being done, add onions, potatoes and carrots.
