Sour Cream Potato Salad

Description:
So many potato salad recipes, so little time. This one is part old school, part brand new.
Recipe Type: Side Dish
 
Ingredients:
  • 4 boiled Alabama Irish potatoes, diced
  • 1/4 cup diced green onions
  • 3 tablespoons diced radishes
  • 2 hard-cooked eggs, diced
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
Directions:

Combine potatoes, onions, radishes and eggs. In a separate bowl, mix mayonnaise, sour cream, vinegar, salt and sugar. Mix lightly with potato mixture. Place in a covered bowl in refrigerator to chill at least one-half hour before serving.
