Red Velvet Cake

Ever present on the Alabama holiday table, red velvet is a rich and decadent choice.

Ingredients:

Cake

  • 1/2 cup shortening
  • 11/2 cups sugar
  • 2 eggs
  • 2 cups flour
  • 2 teaspoons cocoa
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 ounces red food coloring
  • 1 teaspoon baking soda
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla extract

Icing for red velvet cake

  • 1/2 cup margarine, softened
  • 1 pound confectioners sugar
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup Alabama pecans, chopped

 

Directions:

Cake

Cream shortening in mixer bowl until light. Add sugar; beat until fluffy. Beat in eggs. Mix flour, cocoa and salt together; add to creamed mixture alternately with mixture of buttermilk and food coloring, mixing well after each addition. Dissolve baking soda in vinegar. Fold into batter with 1 teaspoon vanilla extract.  Spoon batter into three greased and floured cake pans. Bake at 350 degrees for 35 minutes. Cool in pans for several minutes. Remove to a wire rack to cool completely.

 

 

Icing

Combine margarine, confectioners sugar and cream cheese in a mixer bowl; beat until smooth. Beat in 1 teaspoon vanilla extract; stir in pecans. Spread icing between layers of cake.
