Mix sugar, oil, sweet potatoes, eggs and vanilla. Add remaining ingredients; mix well. Put equal amounts in three standard loaf pans. Bake at 350 degrees for 60-80 minutes. When cool, slice loaves as thick or thin as desired.
Note: A variation of this recipe reduces the sugar to 2 1/2 cups and uses 1 1/2 teaspoons salt. Part of the flour may be used to coat the dates and nuts before adding them to the batter; this keeps them from sinking to the bottom.
