Ripe Cherry Congealed Salad

Servings: 6 1/2 cups or 12 servings
 
Ingredients:
  • 1 8-ounce cream cheese(softened)
  • 1/2 cup mayonnaise
  • 1 package (3-oz.) cherry Jell-O
  • 1 package (3-oz.) strawberry Jell-O
  • 1 cup boiling water
  • 1 can (1 lb. 1 oz.) pitted dark sweet cherries
  • 1 can (13.5 oz.) pineapple tidbits
  • 1 (7 oz.) bottle Coca-Cola
  • 1 cup Alabama pecans
Directions:

Blend cream cheese and mayonnaise until smooth. Dissolve Jellos in boiling water. Stir into cream cheese mixture, blending well. Drain cherries and pineapple, measuring 1 1/2 cups syrup. Then add syrup and cola to gelatin. Chill until very thick. Fold in cherries, pineapple and nuts. Pour into 1 1/2 quart mold. Chill until firm. Un-mold.
