Potato Croquettes

Servings: 8 croquettes
 
Ingredients:
  • 2 cups mashed Alabama Irish potatoes
  • 1 egg, beaten
  • 1/4 teaspoon onion juice
  • 1 egg, beaten
  • 1 tablespoon water
  • Bread crumbs
  • Fat for frying
Directions:

Combine potatoes, 1 egg and onion juice. Stir until well mixed. Chill. Shape into balls or patties. Combine 1 beaten egg with water. Roll potato balls or patties in bread crumbs, dip in egg mixture and roll again in bread crumbs. Fry in deep fat (375 degrees) until golden brown.
