| Layered and congealed salads are found at every family reunion, church homecoming and funeral in Alabama. This is a particularly good salad that you can make the night before.

| Ingredients: |

1 medium head lettuce, torn into small pieces

1/2 cup finely chopped Alabama celery

1/2 cup chopped Alabama bell pepper

1/2 cup sweet Alabama onion or green onions

1 can (small) tiny English peas, drained

1 small can water chestnuts, sliced

6 to 8 strips crisp bacon, crumbled

1 pint mayonnaise

1 tablespoon sugar

1/2 cup grated cheese |
| Directions: |
Lay ingredients 1 through 7 in bowl. Mix mayonnaise with sugar and spread over top of salad. Seal all sides and corners. This seals the moisture in. Cover. Refrigerate overnight. Spread with cheese before serving.
