Corn Muffins, Corn Sticks or Cornbread

Description:
The importance of cast iron cannot be stressed enough. If you don't have a skillet, you need it anyway to fry chicken and corn and to cook squash (among hundreds of other applications). So, go ahead and spring for it.
Recipe Type: Dessert and Breads
 
Ingredients:
  • 1 cup cornmeal
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon soda
  • 2 teaspoons baking powder
  • 1 teaspoon sugar
  • 1 cup buttermilk
  • 1/4 cup oil (use part of oil for greasing pan)
  • 1 egg
Directions:

Mix all dry ingredients together. Add buttermilk, oil and egg. Beat until batter is smooth. Pour into a hot, greased pan. Bake at 400 degrees until brown.
