Chow-Chow

Description:
If you're going to serve fresh vegetables, you need to have some chow-chow on hand.

Servings: Makes 6-8 pints
 
Ingredients:
  • 1 medium Alabama-grown cabbage, chopped
  • 6 medium Alabama onions, chopped
  • 6 Alabama green peppers, chopped
  • 6 Alabama sweet red peppers, chopped
  • 1 quart Alabama-grown green tomatoes, chopped
  • 1/4 cup kosher or canning salt
  • 2 tablespoons prepared mustard
  • 6 cups vinegar 21/2 cups sugar
  • 11/2 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 2 tablespoons mustard seeds
  • 1 tablespoon mixed whole pickling spices
Directions:

Combine vegetables and mix with salt. Cover and let stand overnight. Drain.  Mix mustard with a little vinegar in a pot; add remaining vinegar, sugar and spices. Simmer for 20 minutes. Add vegetables and simmer for 10 minutes. Continue simmering while packing one jar at a time. Make sure liquid covers the vegetables. Process in boiling water bath for 5 minutes at 212 degrees.
