Rabbit Sausage

Description:
Rabbits have historically been one of the most hunted animals in Alabama. Why? They were plentiful and relatively easy to catch. Their meat is tender and delicious, especially when you've got a young one. Larger, older rabbits are best in stews, sausages and soups, Bolton recommends.
Recipe Type: Appetizer
 
Ingredients:
  • 1 pound rabbit meat (no bones)
  • 1/ 3 pound bacon ends
  • 1/ 4 cup onions, minced
  • Salt and pepper, to taste
  • Oregano, to taste
Directions:

Grind both meats through a sausage grinder. Mix thoroughly in large bowl and season to taste. Add onions and knead by hand. Make into patties and fry.
