Carrot Souffle

Description:
Carrots also grow well in Alabama soil. Here's a sweet way to serve them.
Recipe Type: Side Dish
 
Ingredients:
  • 2 cups cooked Alabama carrots
  • 1 cup sugar
  • 1 cup milk
  • 1 stick butter or margarine
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 2 heaping tablespoons plain flour
  • 1 teaspoon baking powder
Directions:

Cook carrots until tender. Beat in blender or mix until soft. Add all other ingredients and blend well. Pour into a greased casserole dish. Bake at 350 degrees for one hour. During the last 30 minutes of baking, top with chopped nuts. Sprinkle the top with powdered sugar.
